Since its inception, winemaking at Château Cambon has been guided by a philosophy that respects both the grape and its environment, favoring minimal intervention in the cellar. Every step is designed to preserve the authenticity of the fruit and reveal the essence of the terroir. The grapes are harvested exclusively by hand, allowing for meticulous selection at optimal ripeness.


A traditional
approach
The winemaking process follows the traditional carbonic maceration method, an ancestral technique conducted without chemical inputs, relying instead on the indigenous yeasts naturally present on the grapes. This approach ensures a respectful fermentation process, highlighting the aromatic richness and unique identity of Gamay, the emblematic grape variety of Beaujolais.
To preserve the purity and integrity of the wine, the use of sulfur dioxide (SO2) is kept to an absolute minimum, added only at the bottling stage. This minimalist approach reflects Château Cambon’s commitment to authentic winemaking, true to its terroir and deeply respectful of the environment.
